Marinara Sauce + recipe and history

The ingredients:

tomato paste 170 gr

Other ingredients:

Olive oil………………1 table spoon

minced garlic…… 1 clove

Italian spice mix………….1 tea spoon

Salt and pepper to taste

Sugar to taste

The main ingredients of Marinara sauce are tomato and garlic. It is widely used in American and Italian pasta recipes. There are many different stories how this sauce came about. One of the stories says that this sauce was first made by the chefs in Neapolitan ship which was coming back from America to Spain in mid-16th century.  Tomato was a very novel product that was brought from America at that time. Another story tells that this sauce was cooked by the wives of the passengers in this ship while they were returning.

But the first time, that this sauce was mentioned in any historical cookery books, was in “ Lo Scalco alla Moderna” by an Italian chef called Antonio Marini.

 

The ingredients for making Marinara sauce:

Chin-chin tomato paste…..170 gr

Olive oil……………………………1 table spoon

Minced garlic…………………….1 clove

Italian spice mix……………………….1 tea spoon

Salt and pepper to taste

Sugar…………….. a pinch

Instructions:

  1. Heat the olive oil in a medium-sized saucepan. Then, add garlic and let it cook for 1 to 2 minutes until it becomes soft and fragrant.
  2. Add tomato paste, water and Italian spice to the saucepan. After that, simmer it on the medium heat and stir in tomato paste constantly and often to prevent the sauce from burning and avoid it sticking to the pan.
  3. Turn down the heat to stop boiling, allow to simmer and keep it for ten minutes. Then, taste it and add salt and pepper as needed.
  4. Serve Marinara sauce on pasta or spaghetti.
